What if I run more than one calendar or booking app?
You pick which one is the book of record. Connect as many as you like, mark one as your primary, and every booking is written there. Change your mind later and the next call follows the new choice without anything being rebuilt.
What gets written with the appointment?
The caller's name and number, the service they asked for, the start and end in your timezone, and the notes from what they said. Enough that whoever opens the entry knows the job without listening back to the call.
